Brunch technique #37: The Tostada Curl. This is an intermediate technique displayed to perfection by Dustin. The wrist curl stretches cartilage needed for mimosa dexterity while protecting against over-extension of the neck while biting. Take note of how he expertly maintains tostada position over the plate, thus keeping any potential spill damage to a minimal.
